Friday, September 18, 2015 - Chicken & Apricot Casserole

Today's post will be a bit different from what you're used to.
Following on from Wednesday's post about how to invite autumn into your home, I'm going to share with you a recipe my family loves. It's relatively easy to make, smells wonderful and tastes amazing. It freezes well and tastes just as good leftover as it did fresh from the pan.
My only disclaimer is that it tends not to look great when plated. 


Chicken & Apricot Casserole ingredients:
1 tbsp vegetable oil 
8 chicken thighs skinned 
1 onion sliced lengthwise 
150g lean smoked back bacon, diced 
1 cup soft dried apricots 
150ml dry white wine 
2 tbsp chopped flat leaf parsley 
Coarsely crushed mixed nuts 


In a large pan, heat the oil and brown the chicken thighs.

Add the sliced onion and continue to cook gently for around 5 minutes, stirring occasionally.

Add the bacon, apricots and wine.

Cover, and cook gently on the stovetop for 20-25 minutes until the chicken juices run clear. Add a little more wine or water if needed. Add the parsley for the last 5 minutes of cooking. 

Serve over rice.
